Another Installment in our dessert series...Banana Bread

Do you have some bananas sitting around? Are they turning brown because you are not eating them quick enough? Well, here is a classic banana bread recipe from one of our own students who cannot stop baking! Banana bread recipe

  • 2 cups of all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 to 3 overripe bananas
  • low fat milk
  • OPTIONAL: Chocolate Chips

  1. Preheat the oven to 350 degrees and lightly grease a 9x5 inch loaf pan. Also, mash your bananas.
  2. In a large bowl, combine flour, baking soda, and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into the flour. Add in a splash of milk until you like the texture. The more milk, the runnier. Mix until combined. If you’d like, add chocolate chips into the batter. Pour into loaf pan
  3. Bake in a preheated oven for 60-65 minutes, or until a toothpick in the center comes out clean. Let the bread cool in the pan for 10 minutes before turning onto a wire rack.
